Our November Local Hero is Rose Martin, founder of the Wee Pie Company. She manages the land and deer to produce a range of artisan wild game pies.
We started in October 2011 with only one member of staff and in just a year we had grown to being a local favorite with 7 team members and an expanding menu of pies.
My husband and I used to manage a remote island off the coast of Scotland that we looked after on behalf of the Branson family. Myself being their private chef and my husband a stalker that scoured the land for local produce and game that I then turned into something delicious in the kitchen.
Alongside the main house were six small cottages that were rented out to holidaymakers, who often forgot that there was no ferry to take them back to the mainland and no shop to get their essentials. So I turned one of the pig sheds into a small shop for cottage guests, where I sold food goods and my homemade pies. They were so well received that when we moved to Perthshire three years later the Wee Pie Company began. Stemming from an ethos of knowing where every single element came from. The meat stalked, the vegetables picked and finally wrapped in my homemade pastry.
I love nothing more than cooking with locally sourced product and knowing the provenance of my pies, it makes it so much more worthwhile. It’s also why I love living in Perth, it really is Scotland’s Larder; on our doorstep we’re totally surrounded with amazing local produce.
My favorite is the Stalkers Pie that contains a layer of haggis, topped with slow roasted venison with carrots & onions; married with a rich tomato & red wine sauce and topped with fluffy pastry. Serve with a full-bodied red wine or a simple good locally sourced beer!
Christmas is really our best time of year, everyone seems to love pies, and they’re such a delicious and comforting meal that feed an entire family whilst only taking 10 minutes in the oven! Perfect!
